Title:Bakewell Tart
Description:Aunt Edna‘s take on this classic British dessert known as Bakewell Tart:
Ingredients:2 oz SR flour. ½ tsp Baking powder. 2 oz soft margarine. 2 oz fine sugar. One egg. 1 tbs lemon curd (can omit this and add 1 teaspoon of almond extract instead). 1 tbs warm water. Flaked almonds. Jam.
Instructions:
1. Line a small (about 6 or 7 inch) fluted dish with pastry (I use a metal loose bottom one).
2. Put a layer of jam (any kind, but I usually use sugar free or reduced sugar jam) on the pastry.
3. Beat all of the ingredients together – and put on top of the jam. Sprinkle with flaked almonds.
4. Bake 350 F for 25-35 minutes.
