Title: Canadian Butter Tarts
Description: Description: I was reviewing some of my recipes to feature and was reminded of this one which was a favourite in the tea room. Also, visiting a Canadian friend recently, she was reminiscing about these tarts, so thought I would make some of for her. It’s a very popular Canadian recipe and although the pastry is different, it works well. Hope you enjoy it, eh!
Serves: 2 Dozen
Ingredients:
2 ½ cups all purpose flour. 2 Tbsp melted butter. ¼ tsp salt. 1 beaten egg. ¼ cup lard. ½ cup brown sugar. 1 egg yolk. ¼ cup corn syrup. ½ cup sour cream. ½ Tbsp white vinegar. 1 cup raisins. ½ tsp vanilla.
Instructions:
Place flour and salt in food processor, add lard and pulse to consistency of breadcrumbs. Add egg yolk and sour cream and knead in. Turn onto lightly floured board, roll out evenly and cut into rounds. Place in greased tart tin. Pour boiling water over the raisins to cover and let sit for a bit. Mix butter, egg, brown sugar, corn syrup, vinegar and vanilla. Drain raisins, and add to mixture, mix well. Fill pastry tarts 2/3 full, and bake in a 350° F oven for 15-20 minutes.
